An homage to the most exquisite dessert, the black box, by famed restaurant Ides. made using an excessive amount of real black truffles freshly shaved only moments before being dropped in the tank.

An uber cleansing, citrusy aperitif, designed to complement a fine dining experience. we zest and juice naimo ruby red grapefruit and cold condition with organic raw honey from northern rivers rainforests.

a true honor. an invitation to collaborate with the worlds number one restaurant.

wheat, pale and acidulated malt provide the crisp base, which we lightly kettle sour, dropping the pH and providing an acidic tang. fresh cherries, from yarra valley, are picked, pressed and added to the tank, allowing a secondary fermentation on fruit. we then barrel aged this brew with lemon myrtle in an ex-shiraz, french oak barrique. finally we bottle condition with fresh yeast, providing a third fermentation to create this tart and refreshing, yet subtly complex ale.
