wheat, pale and acidulated malt provide the crisp base, which we lightly kettle sour, dropping the pH and providing an acidic tang. fresh cherries, from yarra valley, are picked, pressed and added to the tank, allowing a secondary fermentation on fruit. we then barrel aged this brew with lemon myrtle in an ex-shiraz, french oak barrique. finally we bottle condition with fresh yeast, providing a third fermentation to create this tart and refreshing, yet subtly complex ale.
